Giant Steps Applejack Vineyard Chardonnay is a single site wine sourced from the Applejack Vineyard at Gladysdale in the Upper Yarra Valley. The vines were planted in 1997.
At a higher altitude than the Yarra Valley floor, the Applejack Vineyard has a cooler and extended growing season ideally suited to Chardonnay. Its dramatic slope of volcanic soils produces fruit with distinct character.
The grapes are handpicked and sorted in both the vineyard and the winery. The whole bunch pressed juice is coarse settled into tight grained French oak puncheons, a small proportion new, for wild yeast fermentation.
Maturation occurs over 10 months without malolactic fermentation or lees stirring. The wine is then coarsely filtered and bottled via gravity.
Pale green straw, Giant Steps Applejack Vineyard Chardonnay is finely textured with bright fruit flavours and a crisp natural acidity. Cellaring potential is six years.
